Super wood: Holm Oak

For ovens, grills and BBQ low & slow, this wood is great. It’s burns for seemingly ages, due to its  dense nature. This is the tree, that grows the acorns, that feeds the Black-footed Pigs, that become Pata Negra Jamon. It’s a beautiful tree that grows in abundance, and is carefully harvested from ‘pruning’ not felling the healthy trees.

This wood is hard, giving in a fire, much lauded for it’s long burn characteristics and authentic use in wood fired ovens of Spain. It burns to a really nice coal and has a unique pure-white ash characteristic.
